Botanical Name: Apium graveolens
Production: Celery is a marshland plant with a long fibrous stalk that tapers into leaves. The seeds are actually the plant's very small fruit and are found in its small, white flowers.
Qualities: The seeds are small and brown, with a very pleasant, strong smell. They have been used as medicine for thousands of years. In Ayurvedic medicine, they are used to treat colds, flu, water retention, and certain issues of the liver and spleen. Today, celery seed is most commonly used as a diuretic, for treatment of arthritis and gout, calming the nerves, reducing inflammation, and lowering blood pressure.
Common Use: Celery seed is used in many recipes, including pickling spice, bread, and soups. It can also be brewed as a tea.
