Botanical Name: Pimpinella anisum
Production: Anise is a herbaceous annual plant that blooms with little white flowers and produces a small, oblong seed.
Qualities: Anise is a member of the apiaceae family, related to caraway, carrots, cumin, dill, and fennel, and has a very distinctive, pungent, sweet, licorice-like flavor and aroma which can be attributed to its high content of anethole. In herbal medicine, anise is considered to have carminative properties and to soothe the digestive system.
Common Use: Indigenous to the Middle East and Southwestern Asia, this aromatic seed has been enjoyed for centuries in a variety of confections as well as loaves of bread and savory dishes, added to flavor herbal medicines and liquors, and often served as a digestive after meals. It is known to balance the flavors of bay leaf and cinnamon and works well in combination with allspice, cardamom, cloves, cumin, fennel, garlic, nutmeg, pepper and star anise.
Storage: Store in a cool, dark, dry place in a sealed container.
