Why Indian sweets taste different when you buy them abroad.
It is not that the recipe was changed for export. We looked for evidence of that and could not find it. The real answer is stranger, and it is about what can survive a ship.
Every Indian family abroad has had the same conversation in the same aisle. The box looks right. The brand is familiar. It does not taste like it does at home.
The common explanation is that companies make a different, cheaper version for export. We went looking for evidence of that and found none. No study, no regulation, nothing but marketing copy.
The real explanation is simpler and harder to fix. It is a selection effect, not a recipe swap. What reaches a shelf abroad is not a worse version of Indian food. It is the narrow subset of Indian food that can physically survive the journey.
How long fresh mithai actually lasts
This is the number everything else follows from. In a controlled study, plain burfi kept only three to four days at room temperature. Yeast and mould appeared at day seven. Free fatty acids rose from 0.09% to 0.38% over 21 days, crossing the Codex threshold at which fat is considered rancid.

Standardised kaju katli held quality for nine days at 30 degrees, and more than thirty days at 7 degrees. Fried snacks are a different failure entirely: they are packed at 1 to 1.5% moisture and become unacceptable at 4 to 5%. You notice the loss of crispness long before you notice rancidity.
How long the journey takes
Now put those numbers against a container ship. Sailing time alone from Nhava Sheva to Felixstowe currently runs 35 to 40 days. To the US East Coast, 30 to 45. Add port dwell, customs clearance, distribution and shelf time on top.

So the question answers itself. Fresh khoya mithai is not on the shelf abroad because it cannot get there. Not because someone decided to sell you something worse. A three-day product cannot make a thirty-five-day crossing at any price.
What can make that crossing is the survivor set: canned, dried, dairy-free, heavily preserved, or wrapped in oxygen-scavenging foil laminate. Those are genuinely different foods, and they taste like it.
Two things that sound right and are wrong
Vacuum packing does not help mithai. In the 2005 study, vacuum packing actively damaged texture and sensory quality. What worked was a free-oxygen absorber with a metallised or foil laminate, which pushed burfi past 45 days. The intuitive fix is the wrong one.
Refrigeration is a trade-off, not a win. Refrigerated burfi halved microbial growth but nearly tripled moisture loss, 28.75% against 10.3% over 21 days. Your fridge keeps mithai safe and makes it dry. That is why it goes hard.
Where this argument does not hold, and we would rather say so
Pickles are not a freshness story. Oil-packed Indian pickle is hurdle-preserved by salt, an anaerobic oil seal and acidity, and keeps 12 to 24 months unopened. A five-week sail consumes a small fraction of that. Anyone claiming an air-freight freshness advantage on pickles, including us, would be overreaching.
Australia is not a slow lane. Vizag to Sydney or Melbourne runs about 17 days port to port, 21 to 27 door to door. The two-month sea freight figure is a Europe and US Atlantic number, not a global one.
We found no evidence of export reformulation. If a manufacturer does change a recipe for export, we could not document it, and we are not going to assert it. The selection argument stands on its own.
Today's transit times depend on the Suez position. Cape of Good Hope routing currently adds 10 to 15 days to Europe and US East Coast lanes. If Red Sea traffic normalises, this argument loses some of its force, and we will update this page when it does.
What actually changes the answer
Only one thing shortens the journey enough to matter for a three-day product, and it is not better packaging. It is not going by sea.
Express air freight from India runs 3 to 5 business days door to door. That is inside the shelf life of fresh mithai rather than forty times longer than it. It is the difference between eating the thing and eating the version of the thing that survived.
How Desify handles it
Sweets are bought from the maker after the order is placed, packed the same day and flown out. Median time from order to the parcel being handed to the courier is six hours. Nothing is warehoused, so nothing is sitting at ambient waiting for a container.
We put the shelf life on the pack: 5 to 7 days for fresh mithai, 2 to 3 months for namkeen, 6 to 12 months for pickles. Three of those days are the flight. The rest are yours.

Fried snack shelf life figures of 3 to 6 months are manufacturer declarations rather than measured studies, and we have not found peer-reviewed work on chekkalu, chegodi or murukku specifically. We found no published figure for sugar crystallisation timescales in kaju katli or laddu, so we have not quoted one.
