Production: Xanthan gum is produced from simple sugars derived from non-gmo corn, and using a process of fermentation. It derives its name from the species of bacteria used, Xanthomonas campestris.
Qualities: it is an effective thickening agent and stabilizer to prevent ingredients from separating.
Common Use: Xanthan gum has many industrial uses including as a common food additive such as in salad dressings, sauces, and ice creams in order to achieve a desirable texture. It can also be used as a baking substitute for gluten, as it helps provide the sticky texture that gluten traditionally brings.
Xanthan gum is also often added to toothpaste, as it helps to keep products of a uniform consistency.
Storage: Best stored in a cool, dry place in an airtight container.
