Production: Ancho chile is the dried version of the poblano chile pepper which originates from the state of Puebla in Mexico, and is one of the most commonly used dried chiles in Mexican cuisine. The whole dried pepper is heart shaped and about 7-10 mm long with a deep, reddish brown colour.
Qualities: Ancho chile powder is mildly fruity, sweet, and slightly smoky with undertones of plum, raisin, tobacco and a slightly earthy bitterness. It has a mild to medium heat and ranks between 4000 and 9000 on the Scoville Heat Scale.
Common Use: Ancho chile is a key ingredient in the well known Mexican dish mole poblano, and has many other culinary applications in soups, stews, pizzas or on popcorn. It can be used as a spice rub or as a glaze when mixed with honey.
Storage: Store in a cool, dark, dry location in an airtight container.
